Flounder
We got several Flounder yesterday and we are looking for some creative, but delicious ways to cook it. What do you think?

Butterfly the top and stuff with whatever.

I just got finished eating a flounder with an awesome and simple recipe. I do love them fried, but tried something different.
5 ounce bag of Croutons (plain or butter/garlic)
Small can of crab meat
Small bunch of green onions
Saute green onion tops in butter until soft (about 1/2 stick)
Crush croutons and then mix in crab meat. Pour in butter and sauted onions. Mix well.
Cut a flounder, dark side up right down the middle to the bone and then filet out to the edges, making a pocket.
Stuff with the crab cake mix.
Brush the flounder and crab cake with melted butter.
Bake at 400 for about 40 minutes.
Very good and very simple.

I'll try that. The meat was a wee bit dry, but I was following a recipe from a friend. I'll try it. Thanks

Ya'll got me drooling!
Checkerboard and grill over very low heat until flaky...season to taste! Lemon, butter, sea salt, Old Bay, etc...anything light!
