What's the word on freezing amberjack?
I've always eaten them fresh. I vacuum seal everything I freeze and thought I might give it a try.

You are good to go! I did one (vacuum sealed @ year) on the grill and though dang this is not going to be anygood, cooked it til JUST done and it flaked and tasted like I just caught it.

BE SURE TO VACUME SEAL, DO NOT JUST FREEZE IN WRAP UP PAPER, THEY GET MUSHEY AND DO NOT HAVE MUCH FLAVOR.
