Cobia recipes?
Does anyone have a cobia recipe they would like to share? I was thinking about slapping it on the charcoal grill this weekend along with a couple

Olive oil, garlic, salt and pepper. On the charcoal grill. Serve w angel hair pasta. And a few beers!! I like to smoke cobia also. Good luck, when's dinner???

Milto, in my book you can't really go wrong with cobia. I've cooked it using just about every method I've used for other fish... blackened, broiled, fried, etc, and it's never disappointed... AS LONG AS I REMOVED THE BLOODLINE when cleaning it. Some may like the fishier taste that the bloodline provides, but I can't say I'm in that group.
And don't know if you keep the backbones, but they're GREAT for grilling! Cobes large round vertebrae make it darn near impossible to fillet without leaving at least a bit of meat on the bones. Stealing this pic from a recent cookout Bman held where he grilled some up... he shouldn't get too angry with me for sharing it, since I provided the bulk of the backbone meat.

Thanks Gator for the suggestion!! I now have a new favorite!! Here was the finished product. Cobia-n-grits w/ collards and grilled corn on the cob!!! Hope I dont make you too hungry this morning
