YES,
I've done it many times without issue.. just be sure the splice is water tight.

I had an Eagle on my old Bass Tracker. I took it to a mechanic when I lived in TX and his dog chewed the transducer wire in half. He spliced it and told me he had never had a problem but if I did he would buy a new transducer. I used it for about 8 more years in fresh and saltwater and never had a problem. He used heat shrink and sealed it completely.

Did it with my garmin.
Use foil to shield each set....you'll see when you open it up.
