Sausage Making

I'm making some sausage this weekend. Anyone know anywhere between Perry and Tallahassee that sells high temperature cheese? That's the only sausage making product Basspro doesn't carry.

You may try deer processors. Jones in Cairo or the place in Monticello surely have it. They are good people and would probably by willing to help out. I'm sure there are processors closer to where you are, I just don't know of any.

Talked to Limestone, he said they just use regular cheddar cheese.
I may see if Johnston's in Monticello has it, but I've almost decided to just try regular cheddar cheese.
The smoke-house we'll be using doesn't get very hot, and we plan to take it out and cool it as soon as it hits 160° internal temp.
Hopefully the cheese will hold together well enough at that temp. Anyone here ever tried it?
