Give PowerTech Props a call. They make more props than anyone, and have a technical staff that can get you set up.
What was I supposed to do today?

I have a 19 ft Carolina Skiff Seachaser and a 90 hp Mercury. I run a 13" x 19 (pitch) Solas Aluminum prop and get about 43 mph at 6000 rpm. It came with a 17 pitch prop, and it was fine at low end, but the motor would run out of rpm at top end and only got about 37 mph. I actually think I could run a 21 pitch, motor has power for it on top, not sure what it would do to takeoffs.
