We caught two small ones during the NFGFC Tournament on Saturday. I tried my best to split one side midway down along the backbone and fillet all of the meat off in one piece to make stuffed flounder, but I couldn't figure out how to keep the fillets attached out near the end of the bones beneath the fins. Does anybody know if that can be done?

That's exactly what I needed. Thank you.

I tried to do the entire process with a fillet knife rather than scissors. (Now I know why I am a surveyor and not a surgeon!).

Hopefully, the bone tips don't stay in the meat when you clip out the bones.
