Freezing amberjack

I have a good bit of amberjack that I plan on smoking soon. The question is, is it better to freeze it and smoke it later or to smoke it first then freeze it. Going to make dip with it, so is it better to go ahead and make the dip and freeze that? Thanks for any helpos

You can go either way. I prefer however to go ahead and smoke the fish, then vacuum pack serving sized smoked fish packs. I freeze those and thaw as needed for either by itself or to make dip. Doing it that way means the fish has been frozen and defrosted and handled only once. Be sure to,label and date the packages.

I wouldn't freeze the dip.

Thanks EJ, that's what I'm going to do. Smoke 5 lbs ( after a 12 hour brine) and make dip w half and freeze half ( vacuum sealed of course) for dip later.
