Lol some folks can't eat any fish with a stronger flavor than flounder. Myself I love Spanish and blues. We got some mullet dip at Kathy's but....It had bones and scales in it. I like to fry them with Louisiana fish fry, in the blue bag with a catfish on it. To me they have a great flavor(if bled immediately, iced down well and red meat cut off)

I have only fried them as well, I don't even worry with bleeding them, just cut the red line out and put them in the grease. I have not tried them on the Blackstone yet
