Good seeing you too Luke.

I tried a piece just as I finished cleaning it and it was pretty tasty. I'm not going to lie and say it was as good as #1 sushi grade ahi, but in a roll it won't be too bad. Some wasabi and soy sauce wouldn't hurt either.

The next big one I catch I'm going to filet on the boat, wrap it in plastic and stuff it under the ice and eat it when I get home. I've had salmon and grouper sushi and I can say it was 10 times better than either of those.

I believe I'm done with my bonita experiment. Tom did the right thing with his -- ate it right after it was caught. I tried the sushi thing with mine the next day and it was so-so. The time I had done it before and enjoyed it we ate it the same day we caught it. I also grilled some of it and it wasn't very good. Also smoked some and it was okay but I didn't like the texture and it wasn't nearly as good as smoked king, spanish, AJ or mullet. I least I gave it a shot. :roll: Makes great bait though and that's gonna be all I use it for from here on out!
