with the fishing on the flats just about to bust wide open.......

What is the one bait that you would consider a "must have" if you were going into the shallows for trout and reds???? (size and color)

There is no such thing as "just one bait" in fishing. To answer your question more directly it would have to be live shrimp.(I don't use shrimp).

Different baits fo different days.

I would keep one mirror lure
One green back lure
One Gotcha Lure
Live bait
dead bait

I have had some luck with the gulps (not the slurps)

Them fishy are picky

6" white with pink tail grub on a 1/4 oz. jig is my go to for trout. For reds I like inline spinners and suspending plugs.

If I could only fish with one lure, I would want a 1/8 DOA Jig head (Anyones would probably do) and a DOA Cal Series Rootbeer w/chartreuse tail shad tail.

It all boils down to what your confidence bait is. You'gonna get a different answer from everyone. Whatever bait you have the most confidence in is what you should throw.

A bone colored Mirr-O-Lure She-Dog.

It will start off chrome, but it will be bone after all the finish gets knocked off it. :D
