My kids love honey mustard on everything so I decided to cave in and go with it. I made this new recipe for lunch today and thought it turned out really good. Very fast -- less than 20 min from fridge to plate.
Grilled Honey Mustard Spanish Mackerel
Skinless filets
Ken's Honey Mustard Salad Dressing
Olive Olive
Owens (Crawfordville) Tupelo Honey
Spice (I put something called Big Daddy's Hot Spice)
Mix a couple teaspoons of olive oil, with maybe 1/4 cup of honey mustard dressing. Cover the the fish with it. Drizzle a little pure tupelo honey on it for extra flavor. Sprinkle your favorite seafood spice on it. Grill it maybe 7 min on a side. If you're new to grilling fish, use a fish grill basket with some non-stick spray on it otherwise all the fish will crumble into the fire when you turn it. Kids will like to dip it in some extra honey mustard dressing or ketchup on the side.
