Need Grouper throat recipe

Went out on the Lady J out of Port St. Joe last Sat. Did well with the Grouper, Snapper and Trigger fish. Have 3 Grouper throats that need to be cooked up. Can anyone help me. Someone said they make a mean chowder.

Don't know about chowder, but they sure are good fried. Lots of meat on a grouper throat.
What was I supposed to do today?

Please let me know if you figure out the secret to frying them. Angelo's fried grouper throats are about the best fish I have ever eaten but I just can't get them to come out very good when I try it. :cry:

I just rub them down with whatever spice mix I'm in the mood for then either blacken, or broil them.

Something else I've recently discovered: AJ throats are even better than grouper throats. Now I just swing into Coastal with my throats after a trip and have them blackened, and save the fillets for later. (And fried AJ backbone, mmmmmm.)
