You can use your call sign for ship-ship or were implying some don't use nothing? Thats how I do it, most of us don't have boats big enough to put a name across the transom
When the channel is quiet, press the microphone button and call the ship you wish to call. Say "[name of ship being called] THIS IS [your ship's name and call sign (if applicable)]."
Though we do not follow this procedure by the book, it is usually "How bout cha BigT, this is Chalk"
I didn't realize they had assigned channels, the only time I listen to other channels is to snipe fishing info
