Filet knives
I am seeking some advice on filet knives. I own 3 different knives & am not pleased with any of them. Two were gifts, a Rapala & a Henckels, which is really not a filet knife at all. I did purchase a Gerber b/c I have a pocket knife that sharpens up very well and holds its edge. This is not true with the Gerber filet knife. Maybe b/c it's stainless and the pocket knife is tool steel.
Anyway, I would like to have a stainless steel filet knife that sharpens up nicely and holds its edge without spending a small fortune. Anyone know of anything that meets this criteria? Thanks.

I buy Dexter-Russell brand knives- the ones with white plastic handles.

I have an 8' fillet knife and a similar Serrated fillet knife.
Those are perfect for Reds, grouper and other similar big fish.
The serrated blade cuts through heavy scales, skin and bone.
Then I have a 7" very flexible fillet knife I use for trout and freshwater fish.
You can get them at Angie's Marine Supply in Panacea.
They run from $10 to $20 each

Just to be a contrarian: Forschner Cimeter 10" Not so good for cleaning bream but does a wonderful job on wide/broad body fish.

What do you all use to sharpen those D Russels ? They're made of tough steel.......

I get mine professionally sharpened once a year. Between uses I use a 3 dollar hand sharpener with a hand guard which is what the professional sharpener reccommended.sundown wrote:What do you all use to sharpen those D Russels ? They're made of tough steel.......
